※ The pineapples of Guanmiao District are known for their quality, tanta-lizing flavors, and refreshing sweet and sour tastes
※ Guanmiao pineapples are famous throughout the world. Over 800 hectares of land are devoted to pineapple farming. The hilly, sloped land help grow fruits with a thick and juicy texture and a well-balanced flavor, a fine combination that proved to be popular amongst fellow consumers.
※ Pineapple cultivars grown in Guanmiao include Taiwan Agriculture No. 1, No. 2, No. 3, No. 4 (Shijia pineapple), No. 6 (Pingguo pineapple), No. 11 (Siangshuei pinapples), No. 13 (Ganjhe pineapple), No. 16 (Tianmimi pineapple), No. 17 (Jinzuan Pineapple), No. 18 (Jinguihua pineapple), No. 19 (Mibao pineapple), as well as other unique varieties such as Cinglong (green dragon), Niunai (milk), Jhenjhu (pearl), and Tangshuang (sugar frost), making Guanmiao home to the most diverse and complete selection of pineapple cultivars throughout Tainan City.
※ Pineapples are a tropical fruit capable of growing in 15-40oC. Optimal growth is achieved in a temperature of 28~30oC. Pineapple cultivars have been perfected through selective breeding, ensuring that Guan-miao is capable of providing harvests throughout the year. However, each cultivar or flavor would have their own peak harvest period. 
※ Pineapples need to be grown in areas with abundant sunlight. Gun-miao's pineapple farms are located along sun-facing slopes, with the hill slopes offering good drainage and plenty of light as well as a unique red sandy soil. Although pineapples grown in Guanmiao are smaller than those grown on flat land, the fruits offer excellent quality and sweetness that have helped to consolidate the fame and popularity of Guanmiao pineapples.

●Name: Bamboo shoots
Fresh green bamboo shoots are harvested before dewing to preserve the best flavors.
※ Due to its hilly landscape and unique topography, Guanmiao District is covered in many bamboo forests. In addition to providing raw bamboo for making bamboo ware, other types of bamboos are also available, such as green bamboo prized for its green bamboo shoots, a valuable ingredient for popular culinary delicacies.
※ Green bamboo shoots can be divided into two major categories: green bamboo shoots and Wujiao green bamboo shoots. Most green bamboo shoots in Guanmiao, Longci, and other mountainous regions would belong to the former type. Bamboo shoots can be harvested from April to October, with June to August being the peak harvest season. The bamboo forests of Guanmiao are productive and provide high quali-ty bamboo shoots that are mostly curved in shape.
※ The edible parts of the bamboo shoots would be its nodal areas. The finest shoots would be those with tips that curve upwards with very little hollowness. Those of poorer quality grows straight, which means that there's considerable hollowness in between, resulting in fewer edible parts. Emerging green shoots will make the bamboo shoot bitter and must be excised immediately. When choosing bamboo shoots, try to feel its base. Smoother surfaces provide a more tender texture. Try to choose shoots with smooth glossy exteriors as well. Wrinkling or signs of drying would mean that the shoot is too old and lack sweetness or flavor. Bamboo shoot farmers are dedicated to upholding the quality of their produce, and spend a great deal of time categorising and rating their harvests. Graded bamboo shoots must then be cleaned and refrig-erated before they are sold.
※ Raw bamboo can be cut into slices measuring about 2 cm wide and 4 cm in length which are then cooked quickly in hot water to make crispy bamboo shoot. Such materials are perfect for cooking soup or stir fries, and would not lose its wonderful texture despite extended cooking. Bamboo shoots that have turned green to the point that it is inedible may be peeled and cut into irregularly shaped pieces. These pieces can then be soaked in clean water (changing the water once) to restore it as white crispy bamboo shoots.

Guanmiao noodles is represented by the few Guanmiao noodle makers who insist on 100% handmade and natural sun drying. The fine texture made such noodles a favorite amongst the consumers.
※ With the exception of simple motors and conveyor belts for the knead-ing process, the noodle makers of Guanmiao insist on employing manu-al labor, natural sun drying, and zero preservatives. Such dedication quickly achieved popularity for their products that were readily snatched up by noodle vendors. Residents in nearby districts and Kaohsiung City will often buy Guanmiao noodles when they pass through the area. Noodles made by Guanmiao manufacturers were thus known as Guan-miao noodles and famed throughout Taiwan.
※ Given the popularity of the noodles, more and more people have started making the famous noodle as well. Everyone is familiar with the fact that Guanmiao noodles are sun-dried (and not dried in ovens). Visi-tors would notice pans of noodles being laid out in sunny days along the entire stretch of road.
